This complex wild ale presents a vibrant sensory profile driven by a two-year barrel-aged spontaneous fermentation blended with Pinot Meunier grape marc. The Pinot Meunier imparts elegant notes of crushed raspberries, floral violet, and a subtle vinous earthiness. Brettanomyces character is evident through nuances of wet hay and a delicate rustic funk that balances the expressive fruit. A final addition of fresh grape must adds a touch of brightness to the finish. The result is a highly attenuated, sophisticated Brett Beer that marries the tannic structure of French oak with the lively, ester-forward profile of a mature wild fermentation.
Appearance. Deep pink to light ruby hue (SRM 10-15). Pours with a moderate, fine-beaded white to light pink head that fades to a persistent ring. Slight haze is present, characteristic of unfiltered spontaneous fermentations.
Aroma. High intensity with a complex bouquet of red berries, red currants, and floral Pinot Meunier character. Layered beneath the fruit are Brettanomyces traits of barnyard funk, aged leather, and dusty hay. Subtle toasted oak and vanilla notes from two years in the barrel provide a sturdy backdrop.
Taste. The palate is dry and crisp with an initial burst of tart red grape and wild strawberry. Low malt presence allows the fermentation character to shine, featuring a light non-lactic tang and a notable earthy funk. Very low hop bitterness. The finish is long and bone-dry, showing refined oak tannins and a lingering floral grape skin aftertaste.
Mouthfeel. Medium-light body with a refreshing, high carbonation that creates a prickly sensation. Minimal alcohol warmth for its strength. A slight tannic astringency from the grape skins and barrel aging provides structure without being harsh.
