Popihn Sauvages

This elegant Brett Beer presents a complex harmony of two-year wood aging and vibrant fruit. Deep raspberry notes dominate the profile, supported by the rustic complexity of an open-fermented blend aged in foudres. The extended maturation introduces a sophisticated Brettanomyces character, ranging from earthy barnyard funk to dry hay, while the two-month refermentation on lees adds a delicate creaminess to the finish. Brimming with red berry esters and a hint of tannic structure from the wood, the experience is defined by its vinous elegance, refreshing dryness, and a subtle, non-lactic tartness that elevates the fruit character.

Appearance. Deep pink to light ruby in color; soft, pink-tinted head with moderate retention and light lacing. Appearance shows a slight haze from the fruit addition and yeast.

Aroma. High intensity aromas of fresh raspberry and red currant. Complex Brettanomyces character provides notes of leather, barnyard, and wet hay. Very low crackery malt and a touch of aged oak; no perceptible hop aroma.

Taste. Initial impression is tart raspberry and jammy red fruit. The finish is bone-dry and highly attenuated. Malt flavor is minimal, providing a lean, bready foundation. Brett character is assertive, offering earthy and woody notes without being unpleasantly funky. Bitterness is low, balanced by a light tannic astringency from fruit skins and foudre aging. Crisp, non-lactic acidity.

Mouthfeel. Medium-light body with a very dry finish. High carbonation creates a lively, prickly sensation. Subtle creaminess from the lees contact; very low alcohol warmth.
