This Saison presents a masterful blend of three coolship-cooled batches, refined by two years of maturation in Vosne-Romanée barrels. The sensory profile is profoundly shaped by this extended oak contact, yielding sophisticated vinous notes of red berries and toasted oak. The addition of estate forest honey introduces a distinctive earthy and woody floral character that weaves through the aromatic profile without adding cloying sweetness. Expect a complex interplay of peppery yeast phenols, stone fruit esters, and a rustic grain bill. The finish is remarkably dry and effervescent, showcasing a sophisticated balance between farmhouse funk, vinous elegance, and the delicate influence of honey.

Appearance. Deep amber to pale orange in color (12-14 SRM) with a slight, persistent haze. Pours with a dense, rocky, off-white head that exhibits excellent retention and leaves intricate Belgian lace on the glass.

Aroma. High aromatic intensity featuring a complex blend of spicy black pepper phenols and fruity esters reminiscent of lemon and dried apricot. The Vosne-Romanée barrels contribute a clear vinous character with hints of cherry and oak. The forest honey adds an earthy, floral depth, while the coolship batches provide a subtle, wild leathery funk.

Taste. Initial impression is a balance of grainy malt and spicy yeast. Mid-palate reveals flavors of pear and citrus, followed by a refined red wine acidity and oak tannins. The forest honey provides a lingering floral and woody complexity. Bitterness is moderate and well-integrated, leading to a bone-dry finish with a spicy, peppery aftertaste.

Mouthfeel. Medium body with very high, effervescent carbonation. There is a noticeable but well-integrated alcohol warmth and a very slight tannic astringency from the two-year barrel aging, which enhances the dry finish.
