The addition of sloe berries imparts a delicate berry tartness, complemented by the aromatic lift of lemon thyme and freshly ground coriander seeds. The blend incorporates components aged in Champagne and Sauternes barrels, introducing nuances of white grape, honeyed stone fruit, and a subtle oak backbone. Pink Himalayan rock salt provides a savory edge that balances the fruity German hops. Expect a complex, elevated take on the Gose style that marries historical saline roots with luxurious, vinous elegance and a refreshing, dry finish.

Appearance. Hazy, pale ruby-pink (10-12 SRM) with a moderate, fine-beaded white head showing good retention and light lacing.

Aroma. High intensity; sharp lactic tartness leads into complex notes of red currants and sloe berries. Distinct herbal lemon thyme and citrusy coriander aromatics are supported by vinous hints of apricot and floral honey from the Sauternes barrels, with a faint mineral saltiness and fruity hop esters.

Taste. Initial bright acidity and tart berry flavors are followed by a doughy wheat malt base. The mid-palate reveals herbal thyme and spicy coriander, balanced by a perceptible but refined pink Himalayan rock salt character. The barrel influence adds layers of dry white wine and toasted oak. Finishes very dry and crisp with lingering fruit skin tannins and a refreshing saline lick.
