The collaboration with Holy Mountain yields a beer of immense depth, further elevated by maturation in dessert wine barrels. Aromas of bittersweet chocolate and espresso meld with the honey’s floral perfume and the barrel’s vinous, stone-fruit elegance. On the palate, a velvety, viscous body carries layers of burnt caramel, black licorice, and dried figs, balanced by a firm roasty bitterness. Appearance.Jet black and opaque (40 SRM). Pours with a dense, dark brown head that exhibits moderate retention. High viscosity is evident through thick legs coating the glass.
Aroma.Intense and complex. Rich layers of dark chocolate, espresso, and burnt grain are complemented by a distinct floral honey sweetness. Significant dark fruit esters of raisins and prunes are joined by vinous, port-like notes and honeyed apricot from the dessert wine barrels. Alcohol is noticeable but smooth.
