This opulent Imperial Stout presents a profound sensory dialogue between dark-roasted grains and over a ton of Estonian honey. The collaboration with Holy Mountain yields a beer of immense depth, further elevated by maturation in dessert wine barrels. Aromas of bittersweet chocolate and espresso meld with the honey’s floral perfume and the barrel’s vinous, stone-fruit elegance. On the palate, a velvety, viscous body carries layers of burnt caramel, black licorice, and dried figs, balanced by a firm roasty bitterness. The finish is sophisticated and long, where the honeyed sweetness elegantly fades into a lingering, warming glow of oak and refined alcohol.

Appearance. Jet black and opaque (40 SRM). Pours with a dense, dark brown head that exhibits moderate retention. High viscosity is evident through thick legs coating the glass.

Aroma. Intense and complex. Rich layers of dark chocolate, espresso, and burnt grain are complemented by a distinct floral honey sweetness. Significant dark fruit esters of raisins and prunes are joined by vinous, port-like notes and honeyed apricot from the dessert wine barrels. Alcohol is noticeable but smooth.

Taste. High intensity with an initial impression of honeyed sweetness and bittersweet chocolate. The mid-palate features deep roasted grain, black licorice, and toasted malt. Bitterness is firm and provides necessary balance to the residual sugar. Vinous wood character, dried figs, and a touch of oak tannin emerge in the finish. The aftertaste is long, warming, and bittersweet.

Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Low to moderate carbonation. Significant and smooth alcohol warmth is present without being sharp or solventy.
