Imperial Stout 13 º
This Imperial Stout offers a massive sensory experience, shaped by eighteen months in Rye Whiskey and Sherry barrels. The aroma is dominated by the floral, creamy depths of Madagascar and Uganda vanilla pods, intertwined with the woody, spice-forward punch of Ceylon and Vietnam cinnamon. On the palate, the base of rich roasted malts provides a foundation of bittersweet chocolate and espresso. The Rye Whiskey barrels impart a peppery oak structure, while the Sherry contribution adds vinous layers of dried fig and raisin. It is a viscous, velvety masterpiece where the high alcohol provides a sophisticated, integrated glow rather than sharp heat.
Appearance. Jet black and completely opaque (40+ SRM). Crowned by a dense, deep tan head with moderate retention that leaves thick, oily legs on the glass as it recedes.
Aroma. High intensity with a complex blend of dark chocolate, charred grain, and black licorice. Prominent layers of creamy vanilla and aromatic cinnamon are complemented by spicy rye whiskey, toasted oak, and a nutty, oxidative vinous note from the sherry casks.
Taste. Intense and multi-layered; initial flavors of bittersweet cocoa and espresso give way to a lush, dessert-like sweetness from the vanilla. The mid-palate features warming cinnamon spice and a distinct rye grain sharpess. Firm bitterness is present but largely balanced by the high residual extract. The finish is long and complex, featuring notes of dark fruit, caramel, and a lingering oak tannin.
Mouthfeel. Full to very full-bodied with a viscous, chewy, and coating texture. Carbonation is low to moderate, providing a velvety mouthfeel. A smooth, noticeable alcohol warmth is present without being solventy.
