This unique American Amber Ale showcases a deep coppery hue and a dense, off-white head. The addition of Corsican chestnut flour imparts a distinctive earthy and nutty complexity that complements the moderate caramel malt backbone. The palate is rounded and unctuous, featuring a harmonious blend of toasted malt and lingering chestnut flavors, finished with a mild bitterness. Appearance. Deep amber to coppery-brown (approx. 14-17 SRM). The head is large, off-white, and exceptionally dense with good retention and lacing, often described as having a creamy, chestnut-flour-like texture. Clarity is generally clear.

Aroma. Moderate intensity featuring a rich malt profile of caramel and toasted nuts, enhanced by a unique earthy scent from the chestnut flour. Subtle floral and spicy hop aromas are present but secondary. Hints of honeyed sweetness and very low esters provide a clean, inviting bouquet.

Taste. Initial malty sweetness yields to flavors of toasted bread and moderate caramel. The chestnut flour provides a distinctive nutty and slightly woody mid-palate. Bitterness is low to moderate, balancing the sweetness without being aggressive. The finish is smooth and harmonious, lingering with notes of chestnut and honey.

Mouthfeel. Medium-full body with a notable unctuous, slightly floury texture attributed to the chestnut. Carbonation is moderate. It feels smooth and rounded on the tongue with a gentle alcohol warmth that is well-integrated at 6% ABV.

Bière du terroir et de la nature

PIETRA est une bière de spécialité, de basse fermentation.

Elle est brassée selon des méthodes traditionnelles à partir de malts sélectionnés et de farine de châtaigne.

Les châtaignes utilisées proviennent de la plus belle et de la plus haute châtaigneraie d'Europe, située dans la Castagniccia, à plus de 1 000 mètres d'altitude.

Chaque automne, les fruits sont cueillis à la main, transportés à dos d'âne jusqu'en bas de la colline et triés à la main. Cela garantit une farine de très haute qualité, issue d'un environnement totalement naturel.

Hautement fermentescible, la farine de châtaigne a un excellent impact sur la qualité de la mousse et donne à la bière sa belle coloration. Mélangée au malt lors de l'empâtage, la farine de châtaigne est un ingrédient primordial et non un simple arôme.

Cette recette, unique au monde, donne à la PIETRA son goût contradictoire, accentuant une amertume subtile et persistante.

Puissante et délicate, robuste et douce, la Pietra titre 6 % d'alcool. Elle présente une belle couleur ambrée, une mousse intense de couleur châtaigne, dense et crémeuse, qui rend le plaisir de la dégustation encore plus agréable.
