It presents a harmonious marriage of orchard freshness and deep, oxidative wood-derived notes, culminating in a dry, structured, and sophisticated finish.
Appearance. Brilliant clarity with a pale gold to deep straw color. A very fine, light effervescence produces a brief, white ring of bubbles that quickly dissipates, leaving no lacing.
Aroma. High intensity apple aroma featuring fresh and bruised Pomme d'Or. Distinctive vinous notes of grape skin and oxidized wine from the Marsala barrels are complemented by a sharp, boozy apple brandy hint from the Calvados wood. Subtle oak vanillins and a clean fermentation profile with no funky phenolics.
Taste. Immediate tart apple skin and crisp flesh flavors lead into a complex mid-palate of dried apricot, light caramel, and aged wine. The Pomme d'Or apple provides a significant tannic grip.
