Phantom Feathers is a vibrant Wild Specialty Beer that showcases a lush, multi-dimensional profile born from the collaboration with Vault City. The sensory journey begins with an explosion of juicy, sun-ripened peach and soft, floral pear, underpinned by a unique, earthy sweetness derived from the inclusion of carrot. This root vegetable adds a subtle vegetal depth that grounds the sharp lactic acidity typical of modern souring techniques. The wild fermentation character introduces a delicate, rustic complexity that weaves through the bright fruit notes. It finishes with a refreshing, zesty tartness, balancing the natural sugars of the produce for a clean, sophisticated profile.

Appearance. Bright, glowing apricot to pale orange hue with a deep, persistent haze. Pours with a moderate, frothy off-white head that fades relatively quickly, typical of high-acid sour beers, leaving minimal lacing.

Aroma. High intensity aromatics of fresh peach nectar and ripe pear skins. The carrot contributes a distinct but integrated sweet, earthy note reminiscent of fresh juice. Clean lactic tartness provides a sharp backdrop, with very low funky esters from the wild fermentation adding a hint of dried hay or rustic complexity. No hop aroma.

Taste. Immediate, punchy lactic acidity followed by a wave of succulent peach and delicate, grainy pear flavors. The carrot offers a unique mid-palate sweetness that tames the sharp edges of the sourness. Fermentation character is clean but complex, with a dry, mouth-watering finish. Bitterness is non-existent, allowing the acidity and fruit tannins to provide structure.

Mouthfeel. Medium body with a smooth, almost velvety texture from the fruit solids and carrot. Carbonation is moderate, providing a lifting effervescence. Alcohol warmth is light and well-hidden. Very slight astringency from the fruit skins enhances the dry sensation on the finish.
