Pipes And Barrels presents a sophisticated marriage of a structured base and the vibrant, sharp acidity of Oud Beersel Lambic. This blend, matured for 26 months in oak pipes, delivers a refined sensory profile led by a clean, lemony lactic sourness. The aroma offers a complex bouquet of tart green apple and apricot, supported by a subtle, crackery malt foundation. On the palate, the extended wood aging provides a nuanced depth that complements the refreshing acidity. The finish is remarkably crisp and dry, balancing fruit-forward esters with a lively, effervescent mouthfeel that elegantly integrates its 7% ABV.
Appearance. Pale gold to deep straw (3–5 SRM) with a slight haze from the blending process. Displays a large, dense, white head that dissipates quickly, leaving minimal lacing, accompanied by vigorous effervescence.
Aroma. High intensity of sharply sour lactic character, dominated by lemony citrus and tart green apple. Moderate esters of apricot and peach are present, underpinned by a low, crackery malt scent and a subtle, dusty oak note from the 26-month barrel maturation.
Taste. A clean, powerful lactic sourness leads the palate, followed by a light graininess and biscuity malt flavor. Features a pronounced citrusy-lemon fruitiness and tart apple esters. Hop bitterness is undetectable, and there is no vinegary acidity. The finish is very dry and crisp with a lingering lemony tartness.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, refreshing sensation. Despite the 7% ABV, there is only a very subtle, well-integrated alcohol warmth. Features a sharp, crisp acidity with no astringency.
