How time flies; when we initially laid down the original cases for our Oude Orval de Stirchley project in 2014 (launching our first box-set of 4 beers in 2017) we had no idea how it would pan out. Now we’re here in 2022 and here is the box-set in iteration number 6.
One of the questions we hear most in the shop is always “With a range this big, do you have a favourite?” Now whilst this is a deeply subjective question and one which on different days might elicit a different response every time. There are beers that we will instinctively reach for time and time again. Orval is just such a beer, one which is unique to itself and at the same time one which has a character that changes in a very pleasing way over time. We’ve been incredibly lucky over the years to stumble on Orval in a range of bars offered at different ages and have always loved each and every iteration. So we set to thinking back in 2014 wouldn’t it be good to invest in a long term project to be able to deliver that drinking experience to the extended beer scene in and around Birmingham.
We present to you here 1 beer at six different ages (bottled in 2022, 2021, 2020, 2019, 2018 and 2017 respectively) that best represent the evolution of Orval over time.

The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used.
What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster.
In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.

Orval beer is a high fermentation beer. The ageing process adds a fruity note, which strikes a subtle balance between the beer’s full-bodied yet complex flavour and bitterness.
The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping.
The various stages of fermentation – combined fermentation with the original yeast and with wild yeast, followed by fermentation in the bottle – mean the beer must age for some time and requires numerous quality controls.
