Ophiussa Poached Apples is a decadent Wild Specialty Beer that functions as a liquid homage to traditional Portuguese desserts. The sensory profile is defined by an intense aroma of baked apples and warm cinnamon, underscored by the vinous, dark-fruit depth of red wine and port wine. Its palate is lush and indulgent, balancing a bright lactic tartness with velvety fruit sugars. Appearance. Deep garnet to amber-red with a heavy, opaque smoothie-like turbidity (SRM 15-20). Pours with a thick, pink-tinted head that shows moderate to low retention due to the fruit oils and low pH; minimal lacing.

Aroma. High intensity with dominant aromas of stewed baked apples and woody cinnamon spice. Deep vinous notes of raisin and plum from the port wine and red wine additions are evident, supported by a moderate lactic sourness and very low earthy funk.

Taste. Initial impression is a balance of sweet fruit and sharp acidity. Rich baked apple and spicy cinnamon flavors are layered over complex wine notes of dark berries and oak-like tannins. Malt character is low, while hop bitterness is absent. The finish is lingering and sweet-tart with a clean lactic acidity that prevents the heavy fruit from cloying.
