Drunken Pears is a vibrant Wild Specialty Beer that reimagines a classic Portuguese and Dutch dessert. Built on a lactic-forward Berliner Weisse base, the sensory profile is dominated by the fragrance of succulent pears and the vinous depth of red wine. Warm, comforting layers of cinnamon and the subtle, herbal licorice of star anise provide a sophisticated spice counterpoint to the beer’s sharp acidity. The experience is both rustic and refined, capturing the essence of poached fruit in a bright, effervescent medium that finishes bone-dry with a lingering, spiced-berry complexity and a delicate tannic touch.

Appearance. Color ranges from deep pink to a light ruby-purple (SRM 10-15) derived from the red wine infusion. The head is pinkish-white with moderate to low retention, leaving light lacing. Clarity is hazy to opaque due to the heavy pear addition and wild fermentation character.

Aroma. High intensity aromatics featuring prominent poached pear and mulled red wine notes. A distinct spice bouquet of warm cinnamon and cooling star anise overlays a clean lactic sourness. Malt character is very low and crackery, while hop aroma is absent.

Taste. Initial impression is sharply tart and fruit-forward. Flavors of fresh pear flesh and dry red wine tannins dominate the mid-palate, complemented by spicy layers of cinnamon and a hint of star anise licorice. Hop bitterness is negligible, and the malt is a faint, bready backdrop. The finish is very dry and crisp with a lingering vinous and spicy aftertaste.

Mouthfeel. Light body with a high, prickly carbonation that enhances the perceived acidity. Alcohol warmth is very low. A slight tannic astringency from the red wine and pear skins provides structure and a sense of dryness on the tongue.

Tudo começou com uma base de Berliner Weisse à qual foi adicionada uma quantidade absurda de pêra e em seguida incorporado vinho tinto infundido em paus de canela e estrelas de anis. É mais que uma cerveja, é uma experiência de sabores e uma viajem às nossas raízes.
