Ophiussa Blackbird, a collaboration with Salama Brewing, presents a lush and vibrant expression of the Wild Specialty Beer style. This smoothie-inspired sour centers on a "holy trinity" of forest berries—blackberry, blueberry, and raspberry—layered over a velvety peach canvas. The sensory experience is defined by an intense, jammy aromatic profile reminiscent of sun-ripened fruit and wild woodland thickets. Visually striking with its deep red hues, the palate balances bright lactic acidity with the natural sweetness of the fruit. The result is a complex, fruit-forward profile where the tartness of the berries harmonizes with a smooth, nectar-like body and a lingering, refreshing finish.
Appearance. Deep, opaque red to purple hue. Pours with a thick, pinkish-tinted head that shows moderate to poor retention, typical of fruited sours. High turbidity and smoothie-like consistency.
Aroma. High intensity aromatics of freshly picked forest berries. Dominant notes of jammy raspberry and tart blackberry are supported by the earthy sweetness of blueberry. A floral, stone-fruit peach character provides a sweet background, accompanied by a clean lactic tartness and very subtle wild funk.
Taste. Initial impression is a bold, tart explosion of mixed berries. The sharp zing of raspberry and blackberry leads, followed by the rounding, nectar-like sweetness of peach which serves as a flavor canvas. Low hop bitterness. The finish is long and fruit-heavy, balancing fruity sweetness with a refreshing lactic acidity that prevents cloying.
Mouthfeel. Medium-full body with a creamy, luscious, and slightly viscous texture. Carbonation is moderate. A very slight tannic astringency from berry skins provides structure without harshness. No noticeable alcohol warmth.
