Ophiussa Aether is a vibrant American IPA that masterfully bridges classic punch with modern hop elegance. It presents a brilliant clarity and an assertive bitterness characteristic of the West Coast style. The aromatic profile is complex, featuring the dank pine and citrus zest of Mosaic and Simcoe, layered with ripe stone fruit. A significant cold-side addition of Nelson Sauvin introduces a sophisticated dimension of white wine and gooseberry, complemented by tropical highlights. Appearance. Medium gold (7 SRM); brilliant clarity; medium-sized white head with excellent persistence and lacing.
Aroma. High intensity hop aroma featuring dank pine, resin, and citrus zest from Simcoe and Mosaic, blended with the distinct white wine, gooseberry, and tropical fruit notes of Nelson Sauvin. Low, clean, grainy maltiness provides a neutral background with no significant yeast esters.
Taste. Leading with a punchy, resinous hop flavor and firm bitterness, the palate echoes the aroma with notes of grapefruit, pine, and white grape. The malt flavor is low and neutral, supporting the hops without sweetness. It features a clean fermentation character and a dry, crisp finish with a lingering, bitter aftertaste.
Mouthfeel. Medium-light body with a smooth texture; medium-high carbonation provides a crisp, refreshing bite. Very light, smooth alcohol warmth is present without any harsh astringency.
