Mongrel is a colossal Imperial Stout that showcases the intensity of an 18-hour boil and a complex 12-grain bill. This viscous liquid presents a sensory landscape of deep, dark chocolate and espresso, driven by the addition of cocoa nibs and lightly toasted coffee beans. The presence of milk sugar provides a creamy, decadent sweetness that balances the robust roasted grains, while toasted coconut flakes add a subtle, tropical richness to the aroma and finish. At 11.1% ABV, it delivers a powerful, well-integrated warmth. It is a masterful juxtaposition of rugged roast and smooth, dessert-like indulgence.

Appearance. Jet black and completely opaque (SRM 40+). It pours with a thick, deep tan head that shows moderate retention, leaving oily legs and heavy lacing on the glass due to high viscosity.

Aroma. High intensity with rich, deep notes of espresso, bittersweet chocolate, and dark roasted grains. Subtle accents of toasted coconut and sweet cream from the milk sugar are present, alongside light dark fruit esters like raisin and a smooth, noticeable alcohol presence.

Taste. The initial impression is intensely sweet and roasty, featuring heavy dark chocolate, charred grain, and roasted coffee. A creamy mid-palate from the milk sugar and 12-grain bill softens the aggressive roast. Toasted coconut adds a nutty complexity. The bitterness is firm but balanced by the residual sugars, leading to a long, warming finish of cocoa and dark malt.

Mouthfeel. Very full-bodied, thick, and chewy with a velvety, luscious texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present without being harsh or solventy.

After extensive conditioning in primary stainless, we’ve then gone and blended and transferred onto a plethora of cocoa beans, vanilla paste, marshmallow fluff, candy syrup, and burnt brown sugar - we loaded this mongrel up with everything we could find. It’s a dog's world, we just live in it.
