Omnipollo Flow, a collaboration with Birrificio Italiano, redefines the American Lager through a focused 'Italian American' lens. Utilizing a traditional decoction mash, the beer achieves a foundational grainy-sweet malt depth that supports a vibrant hop profile. The exclusive use of Simcoe hops—via Simcoe Dynaboost and Simcoe T90—infuses the sensory experience with bright notes of pine resin, grapefruit zest, and a hint of passionfruit. It pours a brilliant pale straw with a crisp, well-attenuated finish. This lager successfully bridges old-world European technique with modern American aromatic intensity, resulting in a highly refreshing and nuanced pint.
Appearance. Very pale straw (2-3 SRM). Brilliant clarity. Persistent, frothy white head with moderate lacing.
Aroma. Moderate intensity. Clean fermentation profile allows the Simcoe hops to lead with notes of pine needles, grapefruit, and subtle resin. A supportive, low grainy-sweet malt character from the decoction mash provides a crisp cereal-like background.
Taste. Initial impression is crisp and highly refreshing. Low grainy malt sweetness quickly transitions to hop-forward flavors of citrus zest and resinous pine. Bitterness is low to moderate, providing a clean, dry finish that avoids harshness. Clean fermentation with a very neutral yeast character.
Mouthfeel. Light to medium-light body. High carbonation provides a lively, refreshing carbonic bite. Smooth and crisp with no alcohol warmth and zero astringency.
