This Weizenbock offers a deep, malt-forward profile that balances smooth drinkability with intense complexity. Driven by a significant portion of malted wheat and toasted specialty malts, it presents a rich, bready character reminiscent of dark bread crust. The yeast contribution provides a classic German interplay of banana esters and spicy clove phenols, which remain refined and integrated. At 6.5% ABV, it carries a gentle warmth that supports subtle dark fruit notes of plum and raisin. Designed as a toasted wheat ale, the Maillard products create a savory, multi-layered sensory experience that pairs exceptionally well with robust meats or game.
Appearance. Deep amber to dark ruby-brown (18–22 SRM) with a slight haze from wheat proteins. It features a very thick, moussy, tan-colored head with excellent retention and lacing.
Aroma. Moderate to high intensity featuring prominent bready, grainy wheat richness and toasted malt. Distinctive yeast character presents moderate banana and light clove spice, complemented by subtle dark fruit notes of plum and raisin. No hop aroma.
Taste. Initial impression is richly malty with bready wheat and toasted crust flavors. Esters of banana and dark grape are layered with a spicy clove phenol counterbalance. Hop bitterness is low, ensuring a malt-focused palate that finishes relatively dry with lingering notes of fruit leather. No hop flavor is present.
Mouthfeel. Medium-full body with a soft, creamy, and fluffy texture. High carbonation provides a lively mouth-filling sensation. A mild, well-integrated alcohol warmth is present without being solventy.
