This Spanish interpretation of a traditional Weissbier balances classic German yeast traits with a unique regional addition of honey. The sensory profile is led by a high intensity of banana esters and spicy clove phenols, which are elegantly layered over a doughy, bready foundation of wheat and Pilsner malt. Depending on the pour, the beer presents either a refined crystalline clarity or a turbid, intense character. The addition of honey provides a penetrating floral sweetness that complements the soft malt profile without cloying. Effervescent and refreshing, it concludes with a dry, spritzy finish that highlights the harmonious blend of Mediterranean sweetness and Bavarian tradition.
Appearance. Ranges from pale straw to gold (3–6 SRM). Features a very thick, moussy, and long-lasting white head with dense lacing. Clarity varies from brilliant and crystalline to opaque and hazy if the yeast is roused.
Aroma. High intensity with prominent banana esters and clove phenols. Supporting notes of grainy, bready wheat and a distinct floral, nectar-like honey sweetness. Hop aroma is absent, ensuring the yeast and honey aromatics remain the primary focus.
Taste. Initial impression is soft and creamy with a light honey sweetness. Moderate flavors of banana and clove are well-balanced against a bready, doughy wheat backbone and light graininess from Pilsner malt. Bitterness is low (approx. 10–15 IBU), leading to a well-rounded palate and a relatively dry, clean finish with a subtle lingering floral aftertaste.
Mouthfeel. Medium body with a characteristic fluffy, creamy fullness. High carbonation creates a lively, effervescent, and spritzy sensation. Alcohol warmth is light and well-integrated, providing a smooth drinking experience without astringency.
