This Wild Specialty Beer presents a vibrant tropical profile driven by an expressive addition of mango, passion fruit, and lime. The sensory journey begins with an explosion of sun-ripened mango and tangy passion fruit, supported by a sharp, citrusy backbone of lime. A complex wild fermentation provides a clean, lactic acidity and subtle funky undertones that cut through the fruit's natural perceived sweetness. The result is a refreshing, high-intensity sour ale where the fruit adjuncts are seamlessly integrated with a crisp, dry finish. It balances exotic fruit lushness with the sophisticated tartness characteristic of modern wild ales.
Appearance. Hazy, deep gold to light orange (SRM 5–7); small, white head with moderate persistence and light lacing; some fruit particulate may be visible.
Aroma. High intensity of fresh mango pulp and tart passion fruit; bright, zesty lime peel top notes; subtle earthy funk and floral esters from wild fermentation; minimal neutral malt aroma; no hop character.
Taste. Initial impression is sharply acidic and refreshing; dominant flavors of juicy mango and tangy passion fruit; lime provides a bright, citrusy acidity that enhances the tartness; very low hop bitterness; clean, lactic fermentation character; finish is bone-dry and crisp with a lingering tropical zest.
Mouthfeel. Medium-light body; moderate to high carbonation provides a prickly, refreshing sensation; low alcohol warmth; slight puckering acidity; very low astringency.
