Inspired by the classic Belgian monastic tradition, this Belgian Dark Strong Ale pours a deep coppery-brown with a towering, creamy head. The aroma is a complex tapestry of rich caramel malt, sweet dark candi sugar, and intense dark fruit esters reminiscent of black cherries, plums, and raisins. On the palate, a robust, toasted malt backbone beautifully balances expressive yeast-driven spicy phenols of black pepper and warm vanilla. A smooth, noticeable alcohol warmth integrates seamlessly into a medium-full, creamy body, leading to a moderately dry finish that leaves a lingering, elegant impression of dark stone fruit.

Appearance. Deep coppery-brown with brilliant ruby highlights. Supports a massive, dense, moussy, and highly persistent light tan-colored head that leaves exceptional lacing.

Aroma. High intensity of deep, toasted caramel and dark candi sugar malts, without roasted character. Pronounced dark fruit esters of plum, raisin, and black cherry are balanced by moderate spicy yeast phenols of black pepper and soft vanilla. A clean, perfumy alcohol warmth is noticeable and well-integrated.

Taste. Rich and complex toasted malt and dark caramel sweetness upfront, quickly joined by rich flavors of dark cherry, fig, and prune. Yeast character provides a pleasant peppery spiciness. Medium-low bitterness and smooth alcohol presence balance the sweet malt, leading to a moderately dry finish with a lingering dark-fruit and warm, spicy aftertaste.

Mouthfeel. Medium-full body with a smooth, creamy texture. High carbonation provides a lively effervescence without being sharp. Features a prominent but very smooth and comforting alcohol warmth, with no harshness or astringency.
