Timeless is a sophisticated Brett Beer that captures the essence of patience, blending a turbid mashed base featuring Bulgarian Limets with an amber rye saison and a golden sour. Having matured for 25 months in French oak barrels, it presents a layered profile where luscious notes of yellow pear and stone-fruit peach intertwine with the rustic funk of aged hops and wild yeast. The inclusion of Limets and a traditional turbid mash results in a remarkably creamy, full-textured experience that belies its wild nature. Subtle spicy rye nuances and a gentle wood-derived depth round out this complex, evolving, and truly ageless expression of wild fermentation.

Appearance. Deep gold to amber (10-14 SRM) with a slight, persistent haze from the turbid mash and Limets grain. Pours with a creamy, off-white head that shows moderate retention and fine lacing.

Aroma. High intensity and complex. Dominant esters of ripe pear and peach are layered over a base of earthy barnyard funk, wet hay, and aged hops. Subtle spicy rye malt notes and a hint of vanilla-scented French oak provide a refined backdrop to the wild yeast character.

Taste. Initial impressions of tart yellow fruit and stone fruit transition into a rich, bready malt center featuring the unique grain character of Limets and spicy rye. Hop bitterness is low, allowing the aged hop character and Brettanomyces-driven funk to shine. The fermentation is highly attenuated and very dry, but the complex grains provide a sense of richness. The finish is long and clean with a faint, pleasant wood tannin.

Mouthfeel. Medium-full body with a notable creaminess and soft texture resulting from the turbid mashing process. Carbonation is moderate to high, providing a prickly lift that cuts through the richness. Alcohol warmth is very low and well-integrated.
