Nemeton Brewing’s BockThor is a formidable Doppelbock that showcases the depth of traditional decoction mashing alongside a unique harvest-fresh hop profile. Poured dark brown with ruby glints, it offers a rich tapestry of Maillard-driven complexity, featuring deep toasted bread and dark fruit leather notes. The addition of fresh Chris de Peffer hops from Waalwijk, processed within twenty-two hours of harvest, provides a rare, subtle floral and herbal lift that counters the dense malt sweetness. At 9.5% ABV, a smooth alcohol warmth integrates with a full-bodied, velvety texture, finishing with a balanced, lingering richness that honors the double bock legacy with both sweet and bitter depth.
Appearance. Dark brown with brilliant ruby highlights (SRM 22-25). Large, creamy, and persistent off-white head with excellent lacing and high clarity.
Aroma. High intensity maltiness featuring significant Maillard products, deeply toasted bread crust, and hints of dark plum and fruit leather. Low but distinct fresh herbal and floral hop notes from the Waalwijk hops. Clean fermentation with moderate alcohol presence.
Taste. Rich, complex malt-forward profile with flavors of toasted grain, caramel, and raisins. Moderate-low hop bitterness provides essential balance against the malt sweetness.
