This Double IPA is a high-intensity showcase of Southern Hemisphere terroir, specifically emphasizing the biotransformation of New Zealand cultivars. A complex hop bill featuring Peacharine, Riwaka, NZ Cascade, and Nelson Sauvin creates an explosive bouquet of overripe peach, passion fruit, and zesty lime. The addition of Phantasm powder amplifies these thiols, imparting a distinct Marlborough Sauvignon Blanc character. Despite the robust 8.6% ABV, the beer remains exceptionally drinkable with a clean, lean malt profile that allows the saturated tropical fruit notes to shine. It finishes with a firm, refined bitterness that balances the lush fruit intensity.
Appearance. Pale gold to light orange (6–8 SRM). It features a significant, dense, off-white head with excellent persistence and lacing. While the style allows for clarity, this iteration displays a characteristic hazy, opaque glow indicative of intensive dry-hopping and biotransformation processes.
Aroma. Intense and multifaceted tropical hop aroma. Dominant notes of passion fruit and fuzzy peach are complemented by the gooseberry and white grape esters of Nelson Sauvin. Distinctive citrus and diesel-like resin from Riwaka emerge, backed by a very low, clean, cracker-like malt presence. No solventy alcohol is present despite the strength.
Taste. The initial impression is a burst of tropical stone fruit and citrus. Flavors of crushed green grapes and passion fruit dominate the mid-palate, courtesy of the thiol-rich Phantasm. Malt flavor is low and neutral, providing a soft canvas for the aggressive hop character. Bitterness is firm and moderately high but smooth, leading to a medium-dry finish with a lingering, resinous fruit skin aftertaste.
Mouthfeel. Medium-full body with a smooth, almost creamy texture. Carbonation is moderate to high, providing a refreshing lift. A well-integrated, gentle alcohol warmth is present, reflecting its strength without any harsh astringency or fusel burn.
