Conditioned on Pinot Gris pomace and aronia berries, the profile leads with a vibrant vinous character and delicate tannins. The Brett Beer influence provides a signature bone-dry finish with nuanced layers of rustic funk, stone fruit, and a subtle, earthy spice. It presents a marriage of wine-like complexity and wild fermentation, where the red fruit of the aronia berries meets the floral, white grape elegance of the Pinot Gris. This is a refined, effervescent expression of wood-aged craft, balancing bright fruit with a lingering, hay-like Brettanomyces depth.
Appearance. Pours a brilliant, pale copper to soft salmon-pink (6-9 SRM) reminiscent of a classic rosé wine. Displays high clarity with a moderate, fine-beaded white head that dissipates to a thin collar, leaving light, wispy lacing.
Aroma. High intensity. Dominated by a complex interplay of vinous white grape and earthy red berries from the Pinot Gris and aronia. Pronounced Brettanomyces character offers notes of wet hay, leather, and a hint of dusty spice. Subtle oak-derived vanilla and tannins appear alongside a very low, cracker-like malt base. No hop aroma.
Taste. Initial impression is exceptionally dry and fruit-forward. Flavors of tart aronia berries and soft grape skins meld with a rustic, barnyard funk. Malt is a background player, providing a lean, cereal-like foundation. Bitterness is low, but a structural tannic dryness from the wine barrels and fruit skins provides balance. The finish is crisp and highly attenuated, with a lingering, spicy Brett character and a hint of mineral tartness.
Mouthfeel. Medium-light body with a very high, champagne-like carbonation that prickles the palate. Alcohol warmth is negligible. Features a distinct but pleasant dryness and light astringency from the fruit skins and barrel aging, enhancing the wine-like structure.
