This 2025 release of Fjord is an intricate, wild botanical ale fermented with Kveik yeast and matured in Tom Cat Gin barrels. The sensory profile is defined by a vivid garden bouquet, featuring the bright, citrusy lift of Lemon Verbena and Lemon Thyme, anchored by the savory, resinous depth of Rosemary and Pineapple Sage. The gin barrel aging imparts sophisticated notes of juniper berry, wintergreen, and a touch of oak spice. Expect a complex, aromatic journey where the rustic, fruity esters of the Kveik yeast harmonize perfectly with the sustained, spicy botanical finish of the gin.

Appearance. Pale gold to light amber (SRM 5-8) with a persistent, fine-beaded off-white head. The beer exhibits a slight haze, characteristic of unfiltered kveik fermentations and heavy herb infusions.

Aroma. High intensity and deeply aromatic. Prominent notes of crushed rosemary and lemon verbena lead, supported by the forest-like scent of juniper berries and wintergreen. Subtle earthy funk and floral honey from the gin barrel mingle with the bright, citrusy esters typical of kveik yeast.

Les herbes incorporées sont issues des Jardins du Bassin Louise à Québec, un site de démonstration en agriculture urbaine géré par l’organisme Les Urbainculteurs.
