This Fruit Beer presents a vibrant, sun-drenched interpretation of a classic Witbier, reimagined through the lens of Italian limoncello. Brewed with a foundation of wheat and oat flakes, the sensory profile is dominated by a bright, aromatic explosion of lemon puree and lemon zest. The citrus character is both zesty and slightly sweet, evoking the essence of the liqueur without being cloying. Underlying the fruit is a soft, bready malt presence and a hint of traditional spicy yeast character. It is an exceptionally refreshing experience that balances the tartness of the lemon with a smooth, creamy texture, finishing clean and crisp.
Appearance. Pale straw to light gold (3-4 SRM). Displays a characteristic hazy to opaque appearance from the high protein content of the wheat and oat flakes. Features a dense, white, creamy head with good retention and moderate lacing.
Aroma. High intensity of fresh lemon zest and candied lemon peel, reminiscent of limoncello liqueur. Background notes of grainy, bready wheat and a light herbal hop character. Subtle fermentation esters provide a hint of spicy coriander or clove-like phenols, typical of the base style.
Taste. Initial impression is a bright, zesty lemon punch followed by the creamy sweetness of unmalted wheat. The lemon puree adds a refreshing tartness that cuts through the bready malt. Hop bitterness is low, allowing the citrus oils from the zest to provide a pleasant, mild astringency. The finish is dry and crisp, with a lingering, clean citrus aftertaste.
Mouthfeel. Medium-light to medium body with a noticeably smooth, creamy texture provided by the oat flakes. Carbonation is high, creating a prickly, effervescent sensation on the tongue. Alcohol warmth is negligible, enhancing the high drinkability and refreshing nature of the beer.
