Appearance. Deep gold to amber (SRM 7-12) with a slight haze. As a still beer, it lacks any foam, head retention, or lacing.
Aroma. Moderate-high intensity featuring complex Brettanomyces funk including notes of wet hay, leather, and dusty cellar. The aged hops provide an earthy, herbal, and slightly cheesy character. Light bready wheat notes from the turbid mash are present alongside a distinct woody, vanillin oak presence.
Taste. Initial impression is bone dry and earthy. Low bready malt flavor is quickly overshadowed by a firm, woody bitterness from the aged hops. Fermentation character is highly complex with stone fruit esters and a rustic, leathery funk. No significant lactic acidity is present. The finish is very dry with a lingering, structured tannic bitterness from the extended oak aging.

We have been hoping to find a barrel that would have enough character and bite to exist without the need for carbonation. The wort was made using a turbid mash and underwent an extended boil with large quantities of aged hops. After two nights in our coolship, the wort was transferred to a single 500 litre barrel for four years of fermentation and maturation. The resulting beer was bottled still, without the addition of sugar to produce a refermentation. It has a significant richness for the abv, balanced by a striking hop bitterness, and lingering tannin from the four years in oak."
