This sophisticated Saison showcases the rustic elegance of Mills Brewing’s coolship fermentation and oak maturation. The use of spelt and rye provides a complex, grainy foundation with a distinctive spicy depth, while European hops offer an earthy, floral counterpoint. Maturation in large oak casks introduces a subtle wild yeast character, blending stone fruit esters with a whisper of wood-derived tannin. The final dry-hopping with whole-leaf hops provides a bright, herbal aromatic lift. Effortlessly dry and highly effervescent, it balances a firm bitterness with a nuanced, farmhouse funk that lingers through a crisp, peppery finish.
Appearance. Luminous pale orange to deep gold; cloudy and unfiltered with a thick, rocky, long-lasting ivory head that leaves persistent Belgian lace.
Aroma. High intensity with a complex bouquet of peppery phenols and stone fruit esters like apricot and pear. The malt is rustic and grainy, showing spicy rye and nutty spelt notes. European hops contribute a moderate earthy and floral character, complemented by a light, leathery wild yeast funk and a hint of seasoned oak.
Taste. An initial burst of bright citrus and pome fruit gives way to a complex grain bill of spicy rye and soft, bready malt. Hop bitterness is moderate to firm, accentuated by the very high attenuation. Fermentation character is dominant, featuring cracked black pepper and herbal hop flavors. The finish is bone dry and clean, with a lingering spicy aftertaste and a faint, pleasant tartness.
Mouthfeel. Medium-light body with very high, effervescent carbonation. There is a light, well-integrated alcohol warmth and a very slight tannic structure from the oak casks. Extremely crisp and refreshing.
