This refined Saison presents a sophisticated sensory profile born from a traditional turbid wort and a unique fermentation using Tom Oliver's cider lees. Fourteen months in old oak barrels have imparted a delicate complexity, blending rustic, grainy malt notes with a vibrant, wild yeast character. The aroma is a tapestry of pome fruit, earthy funk, and a hint of aged oak, while the palate is exceptionally dry and effervescent. Without the distraction of dry hopping, the interplay between the crisp acidity and the subtle, spicy continental hop character takes center stage, leading to a long, clean, and remarkably elegant finish.
Appearance. Pale straw to light gold. Characteristically hazy from the turbid mash, topped with a persistent, rocky white head that leaves delicate Belgian lace. Highly effervescent with fine bubbles.
Aroma. Moderate to high intensity. A complex aromatic profile featuring fruity esters of green apple and dried pear alongside spicy black pepper notes. The cider lees contribute a subtle, earthy funk and leather-like character. Low grainy malt and a soft, woody oak presence provide a base for light, floral hop notes.
Taste. The initial impression is bone-dry and refreshingly tart. Flavors of tart lemon and rustic, cereal-like grains are prominent. The fermentation character is assertive, offering spicy phenolics and a light, cider-like fruitiness. Hop bitterness is moderate, though the dry finish and slight acidity enhance the perception of crispness. Finishes very clean with a lingering, spicy, and woody aftertaste.
Mouthfeel. Light-bodied and lean due to very high attenuation. Carbonation is high and prickly, lending an effervescent, champagne-like quality. No perceptible alcohol warmth. Extremely smooth with a slight, pleasant tannic grip from the extended oak aging.
