This Saison offers a rustic sensory journey, shaped by eleven months in Tom Oliver’s oak cider casks and a complex grist of barley, oat, and rye. The aroma is a vibrant collision of Motueka’s lime-zest brightness and the floral, spicy elegance of Celeia hops, underpinned by a faint, tannic apple skin character from the wood. On the palate, the rye provides a dry, peppery snap that melds with soft, silky oats. A firm bitterness is balanced by wild, fruity esters and a subtle, vinous acidity. Effervescent and bone-dry, it concludes with a lingering, earthy hop finish and a whisper of oak.
Appearance. Deep gold to pale amber (7-9 SRM) with a slight haze from the oats and rye. It features a long-lasting, dense, rocky ivory head with significant Belgian lace and high effervescence.
Aroma. High intensity featuring a mix of citrusy lime from Motueka and spicy, floral notes from Celeia. A distinctive fruity-spicy yeast profile provides black pepper and pear esters, complemented by a rustic cider-like pome fruit character and faint oak vanillin.
Taste. Initial impression is very dry and bitter. The malt profile is grainy and soft with a peppery rye bite. Hop flavors of lemon zest and earthy herbs are prominent. Fermentation character is assertive with peppery phenols and citrus esters. The cider cask adds a light vinous complexity, finishing with a crisp, bitter, and lingering spicy aftertaste.
Mouthfeel. Medium-light body with a noticeable silkiness from the oats. Very high carbonation provides an effervescent, prickly sensation on the tongue. Light, well-integrated alcohol warmth with minimal astringency.
