Mesh is a sophisticated dark Brett Beer, crafted from a traditional turbid mash and a complex variety of dark malts. Aged for eighteen months in French and American oak, it displays an intricate balance between light tartness and a surprisingly substantial body. The extended boil with aged German Hersbrucker hops provides a structural foundation, while a dry-hop addition of Columbus introduces distinctive resiny and peppery aromatics. Sensory cues of subtle chocolate and roasted grains meld with the earthy funk of Brettanomyces, resulting in a smooth, dry finish that bridges the gap between a robust dark ale and an aged wild beer.
Appearance. Deep mahogany to near-black (35–40 SRM). Topped with a persistent, tan, creamy head that leaves fine lacing. Clarity is slightly hazy to opaque, characteristic of a turbid mash and long wood aging.
Aroma. High intensity. Initial notes of dark chocolate, toasted bread, and light wood smoke from the dark malts. This is layered with earthy funk—wet hay and forest floor—and a sharp, resiny, peppery top note from the dry-hopping. Subtle vanilla and oak tannins are evident.
Taste. A complex interplay of flavors; subtle chocolate and roasted grain are immediately met by a gentle, citrus-like tartness. The mid-palate reveals aged oak and a touch of spice. Hop flavor is predominantly resinous and herbal, with very low bitterness from the aged hops. The finish is remarkably dry and clean with a lingering peppery aftertaste.
Mouthfeel. Medium-full body, exhibiting more viscosity than typical for the style. Carbonation is moderate. It offers a smooth, slightly creamy texture with a very light oak-derived astringency and a faint, well-integrated alcohol warmth.
