Glass is a remarkably ethereal Straight Sour Beer, reflecting Mills Brewing’s minimal-intervention ethos. The extra pale, mineral-driven wort provides a crisp, crackery canvas for the vibrant lactic acidity. Fermentation in a single cider barrel imparts a delicate, orchard-fruit complexity that complements the citrus and subtle floral notes of fresh Mystic hops. It is exceptionally light and refreshing, striking a masterful balance between sharp lemony tartness and a dry, clean finish. This unblended expression highlights the purity of the spontaneous process, delivering a bright, effervescent profile that feels both rustic and incredibly precise.

Appearance. Very pale straw (2 SRM); hazy clarity with significant effervescence; large, dense white head with poor retention typical of high-acidity styles.

Aroma. High intensity lactic sourness dominates, layered with sharp lemon and tart green apple notes from the cider barrel. A subtle mineral quality and soft floral, citrusy nuances from Mystic hops play over a background of crackery pale malt.

Taste. A clean, assertive lactic sourness leads the palate, balanced by light bready and grainy malt flavors. The cider barrel maturation adds complexity with notes of tart apple and pear.
