Mikkeller Spontanblackberry offers a profound sensory journey into the world of spontaneous fermentation. Pouring a deep, vibrant violet with a fleeting pink foam, it immediately releases a high-intensity aroma of fresh, tart blackberries intertwined with the rustic funk of a Belgian barrel house. The spontaneous fermentation delivers complex layers of earthy hay and leather, while the extended oak aging provides a subtle woody structure. On the palate, an aggressive lactic acidity meets the sharp, seed-like tannins of the berries, resulting in a bone-dry finish. This Wild Specialty Beer balances its 7.7% ABV with a refreshing carbonation, leaving a lingering, mouth-watering tartness.
Appearance. Deep purple to burgundy color (SRM 25-35) with a hazy to opaque body. The head is a light pink tint with low retention and minimal lacing due to high acidity.
Aroma. High intensity of fresh, tart blackberries with a significant wild fermentation profile featuring barnyard funk, wet hay, and earthy leather. Subtle notes of toasted oak and vanilla emerge from the barrel aging.
Taste. Sharply acidic and sour with an immediate burst of unsweetened blackberry flavor. Malt is nearly absent, providing only a thin cracker-like backdrop for the intense lactic acidity and fruit tannins. No hop bitterness or flavor is perceived. The finish is exceptionally dry, clean, and lingering with a tart fruit skin character.
Mouthfeel. Medium-light body with high, effervescent carbonation. A puckering astringency from the fruit skins and oak tannins is present. A noticeable but well-integrated alcohol warmth provides a structural backbone.
