This American IPA is a complex exploration of spice and fermentation, characteristic of Mikkeller's innovative approach. It leads with a sharp, aromatic ginger bite and the distinctively rustic funk of Brettanomyces. The base of Pale malt provides a clean, lean canvas that allows the citric edge and floral hops to remain front and center. Expect a vibrant interplay of orange peel and earthy spiciness, building toward a high, bracing bitterness. The finish is remarkably long and bone-dry, driven by the Brettanomyces attenuation, leaving a lingering trail of herbal hop resin and warm ginger root on the palate.

Appearance. Deep gold to light amber (8–12 SRM). Pours with a persistent, medium-sized white head that leaves significant lacing. Generally clear, though a very slight haze is present from the ginger and wild yeast.

Aroma. High intensity. Prominent notes of fresh ginger root and earthy Brettanomyces funk (leather, hay) dominate. These are supported by a citric hop profile and floral undertones. Low, grainy Pale malt sweetness provides a neutral background. No significant diacetyl.

Taste. Initial impression is dry and spicy. Strong ginger flavor blends with orange peel and floral hop notes. Bitterness is medium-high to high, characteristic of a classic American IPA. The malt presence is low and grainy, allowing the fermentation character to shine. The finish is very dry and lingering, with a crisp, bitter aftertaste.

Mouthfeel. Medium-light body with a crisp, lean texture. Carbonation is medium-high, enhancing the prickly sensation of the ginger. Very light, smooth alcohol warmth is present at 6.9% ABV. No astringency despite the ginger addition.
