61 Deep is a vibrant and sessionable American Pale Ale that highlights the legendary brewing water of Burton-on-Trent. Despite its lower gravity, it delivers a refreshing sensory experience driven by a blend of five American and Australian hops. The aroma is a bright, zesty bouquet of tropical fruit and sharp citrus, reminiscent of grapefruit and lime. On the palate, the hop-forward character is balanced by a subtle, bready malt backbone that facilitates extreme drinkability. Appearance. Pale golden (SRM 5) with brilliant clarity. Features a moderately large, white, frothy head with good retention and light lacing.
Aroma. Moderately high hop aroma featuring zesty citrus, such as grapefruit and lime, alongside tropical fruit notes of mango and passionfruit. Low neutral, grainy, and slightly bready maltiness supports the hops. Clean fermentation profile with very low fruity esters.
Taste. The initial impression is hop-forward with flavors of citrus zest and pineapple. Moderate bitterness provides a firm structure without being harsh. Low bready malt character provides a light platform for the hops. The balance favors the hops, leading to a medium-dry and clean finish with a lingering zesty hop aftertaste.
Mouthfeel. Light to medium-light body with moderate to high carbonation. Overall smooth finish with no alcohol warmth and zero astringency.
