The beer opens with an intense bouquet of bright, tart cherries and a sharp, clean lactic acidity reminiscent of lemon zest. A delicate background of biscuity malt and a whisper of toasted oak from the barrel aging provides necessary structure. On the palate, the assertive sourness is balanced by the natural fruit character and a faint tannic grip from the wood. This Straight Sour Beer finishes exceptionally dry and crisp, leaving a lingering impression of cherry skins and refreshing acidity.
