This Alternative Grain Beer presents a vibrant take on the West Coast IPA, utilizing gluten-free fermentables to create a crisp, lean canvas for the Manilita hop variety. The sensory experience is dominated by the distinctive New Zealand hop profile, bursting with lime zest, white grape, and subtle passionfruit notes. Despite the absence of traditional barley, the grain bill contributes a delicate, cracker-like foundation with a hint of toasted nuttiness. It pours with a brilliant gold hue and maintains a firm, resinous bitterness typical of the style, finishing exceptionally dry and refreshing with a lingering citrus zest aftertaste.

Appearance. Deep gold to pale amber (7-9 SRM). Generally clear, though a light haze may persist from gluten-free proteins. Moderate white head with fair retention and light lacing.

Aroma. High intensity hop aroma featuring lime, grapefruit, and crushed gooseberry from the Manilita hops. A subtle floral and resinous undertone is present. The malt profile is restrained, showing light bready and toasted grain notes with a faint nuttiness characteristic of alternative fermentables. Clean fermentation with no significant esters.

Taste. Initial hop-driven flavors of citrus peel and tropical fruit lead into a firm, crisp bitterness (approx. 50-60 IBU). The Manilita hop provides a clean, punchy profile of lime and resin. Malt flavors are subtle, resembling rice crackers or toasted buckwheat. The balance is heavily tilted toward hops, concluding in a very dry, clean finish with a lasting citrusy aftertaste.

Mouthfeel. Medium-light body, potentially thinner than a standard barley-based IPA. Moderate-high carbonation provides a prickly, refreshing sensation. Very low alcohol warmth is well-integrated. Smooth with no grain-derived astringency.

A gluténmentes sör előállítása történhet a klasszikus maláta alapanyagok (árpa, búza, rozs) kicserélésével gluténmentes alapanyagokra (köles, rizs, cirok, hajdina, kukorica) vagy egy speciális gluténmolekula bontó enzim a sörlé erjesztése közbeni hozzáadásával. Ez utóbbi jellemzőbb a kisüzemi sörökre, mivel így lehet a legközelebb kerülni egy nem gluténmentes sör ízvilágához.

Európai Uniós szabályozás miatt minden egyes főzetnél laborvizsgálattal kell igazolni, hogy a sörben lévő gluténtartalom 20 ppm (az egész milliomod része) alatti, a Popstarban gyakorlatilag alig lehet kimutatni a glutént.

A West Coast IPA-k (WCIPA) hagyományosan merész komlóaromájukról, magas keserűségükről és citrusos, fenyős aromájukról és ízükről ismertek – jellemzően nagyobb mennyiségű komlót adagolnak a főzőüstbe, ami a stílus sajátosságát adó keserűséget és az erőtejes komlóízt eredményezi.
