This Straight Sour Beer, known as Madamin, is an elegant expression of mixed-fermentation, presenting a deep amber hue from its time in oak vats. The aroma is vibrantly vinous, layering tart red currant and stone fruit over the earthy, wild nuances of Brettanomyces. Its palate is defined by a bright but controlled lactic acidity that highlights notes of marasca cherry, bitter almond, and white peach. Despite its complexity, the mouthfeel remains light and approachable with a dry, clean finish. The oak aging provides a sophisticated structural backdrop to the fruity esters, resulting in a harmoniously balanced and refreshing sour ale.

Appearance. Deep amber color (12–16 SRM). Large, off-white head with moderate retention and light lacing. Clarity ranges from clear to a slight, hazy shimmer typical of bottle-conditioned wild ales.

Aroma. High intensity with a dominant sharply sour, vinous character. Prominent fruity esters of red currant and white peach are layered with earthy, hay-like Brettanomyces funk and subtle woody notes from oak maturation. Malt aroma is low, offering a faint toasted bread or biscuit quality.

Taste. Initial impression is a clean lactic sourness that is firm but not aggressive. Flavors of tart red currant and marasca cherry are primary, followed by nuanced notes of bitter almond and white peach. Malt flavors are supportive and bready. Hop bitterness is undetectable, allowing the acidity to drive the balance. The finish is off-dry to dry and very clean.

Mouthfeel. Medium-light body with moderate to high carbonation that enhances the effervescence. Alcohol presence is well-integrated with only light warmth. Crisp acidity provides a refreshing, mouth-watering sensation without harshness.
