This exceptional Straight Sour Beer presents an assertive, multi-layered sensory experience, marrying a sharp lactic acidity with the deep, rustic influence of rye and rich blackcurrants. The nose is greeted by a complex fusion of tart dark berries, earthy rye spice, and a whisper of sweet vanilla and charred oak from the bourbon barrel aging. On the palate, a vibrant wave of intense blackcurrant juiciness is supported by a clean, lemony sourness and a subtle, bready malt backbone. It finishes dry and crisp, with a lingering fruit skin astringency and a touch of warming oak complexity.

Appearance. Deep, vibrant ruby-red to dark purple with brilliant clarity, showing luminous pink highlights. It pours with a moderate, frothy, pink-tinted head that dissipates fairly quickly to a thin collar, leaving minimal lacing.

Aroma. High intensity aroma dominated by a sharp, clean lactic sourness and intense, jammy blackcurrant fruitiness. Beneath the tart berry notes lies a rustic, earthy spiciness from the rye malt, complemented by subtle bourbon-barrel characteristics of vanilla, toasted oak, and a faint hint of caramel. No hop aroma is present.

Taste. An immediate, striking impact of clean, lemony lactic acidity is beautifully balanced by rich, tart blackcurrant flavor. A grainy, slightly spicy rye malt character provides a sturdy yet understated backbone. Subtle, sweet undertones of vanilla and charred oak from the bourbon barrel aging emerge in the mid-palate, softening the sharp acidity. Hop bitterness is undetectable, with no hop flavor. The finish is highly attenuated and dry, leaving a lingering, mouth-watering tartness and a trace of warming wood tannin.

Mouthfeel. Medium-light body, bolstered slightly by the rye grist and barrel aging, with a lively, moderate-to-high carbonation. Displays a crisp, refreshing acidity and a mild, pleasant fruit skin astringency, accompanied by a subtle, well-integrated alcoholic warmth.
