Après 8 à 12 mois, il ne reste seulement que les noyaux et des pelures. La Kriek lambic est prête à être filtrée et mise en bouteilles. Cette méthode donne une bière plutôt aigre et moins fruitée.
Suite à la disponibilité limitée des vraies 'cerises de Schaerbeek' et en vue de brasser une bière plus fruitée, la brasserie Lindemans a développé une méthode unique alternative et naturelle. Ils utilisent le jus frais des cerises, non concentré et non-sucré qui est mélangé avec la Lambic sélectionnée d'un âge moyen d'au moins un an et dont la plus âgée a mûri au moins pendant trois ans dans des tonneaux en bois.
La bière peut être utilisée comme base de sorbet de cerises ou tout simplement comme apéritif, mais aussi pour réaliser des plats typiques comme 'les tartines aux fromage blanc' ou 'le lapin à la kriek'.
Servir bien frais 2-3 °C.
