Jacobus Liefmans fundó en 1679 una cervecería en el centro de Oudenaarde, en el lado oeste del rio Scaldis, bajo gobierno francés y por lo tanto en la zona donde no se empleaba lúpulo.
Así la cerveza que elaboraba era una Oud Bruin (“cerveza añeja de color castaño”) que no solamente fermenta en cubas abiertas ( y por lo tanto es de fermentación mixta ) pero que antes de comercializar se mezclaba desde diferentes cubas para obtener un sabor homogéneo.
En 2008 fue comprada for Duvel – Moortgat que ha querido mantener su tradición y cultura : la elaboración de sus cervezas se produce ahora en Duvel, desde donde llevan el mosto a Liefmans para fermentar en sus cubas abiertas, donde madura y donde mezclan las diferentes tanques y diferentes añadas, como siempre han hecho los mismos maestros cerveceros – catadores.
La base de todas sus cervezas sigue siendo la Oud Bruin que luego se mezcla (Liefmans Oud Bruin), madura con cerezas (Liefmans Cuvée-Brut), refermenta en botella (Liefmans Goudenband) o se mezcla con diferentes frutas antes de embotellar (Liefmans Fruitesse).
