This Extra Smoothie #1 is a vibrant Wild Specialty Beer defined by its dense, fruit-puree character. A massive addition of Goyave leads the profile with tropical pungency, supported by the creamy, structural weight of Banane and the sharp, acidic snap of Cassis. The sensory experience is deeply saturated, merging the lactic tang of a wild fermentation with a thick, nectar-like texture. Expect a complex interplay of exotic tropical musk and dark berry tartness, resulting in a lush, dessert-like intensity that maintains a refreshing, sour-driven edge. The finish is remarkably clean despite the high fruit concentration, balanced by a bright, underlying acidity.

Appearance. Opaque and saturated deep pinkish-purple hue from the blackcurrant; very thick, viscous body resembling fruit nectar. The head is pink-tinted and creamy, though it shows relatively low retention due to the high fruit solid content.

Aroma. High intensity aromatics dominated by the musky, tropical perfume of Goyave and the mellow, candy-like sweetness of Banane. Sharp, acidic berry notes of Cassis provide a bright counterpoint. Very low lactic sourness is present, with minimal hop or malt character detectable.

Taste. Initial impression is an explosion of tropical Goyave and tart Cassis. The Banane provides a structural, rounding sweetness on the mid-palate that buffers the sharp lactic acidity. Bitterness is absent. The finish is long and fruit-forward, leaving a refreshing tartness and a lingering impression of dark berry skins.

Mouthfeel. Full, viscous, and distinctly creamy body with a heavy weight on the tongue. Carbonation is moderate to low, providing a gentle prickle that helps cut through the fruit density. No alcohol warmth; very low astringency from the fruit skins.

Plus difficile à faire qu’il n’y parait, il est important de trouver le bon équilibre entre fruit, acidité, gourmandise, épaisseur et longueur en bouche.
