Les Danaïdes

This Saison de Garde presents a sophisticated fusion of traditional French maltiness and rustic fermentation character. A complex malt bill featuring Vienna, Munich, and Carared provides a deep biscuit and caramel foundation, while the addition of Pilsner malt keeps the profile crisp. A subtle layer of Fumé malt introduces a delicate wisp of smoke that complements the spicy, herbal notes of Aramis hops. Fermented with Saison yeast, the beer finishes remarkably refreshing and dry, balancing its rich toasty core with peppery esters and a clean, effervescent vitality typical of the style's farmhouse roots.

Appearance. Amber in color (approximately 12-15 SRM) with excellent clarity. It supports a thick, persistent off-white head with fine lacing.

Aroma. Moderate-high intensity featuring a prominent malty richness with notes of toasted bread, biscuit, and light caramel. A faint, clean wood-smoke note is present alongside moderate peppery esters and a low herbal, spicy hop character from the Aramis variety.

Taste. Initial impression is malty-sweet with flavors of biscuit, toffee, and toasted grain driven by the Munich and Vienna malts. This richness is balanced by a medium-low bitterness and a distinct peppery, spicy yeast character. The finish is medium-dry to dry, featuring a clean aftertaste with a lingering hint of smoke and herbal hops.

Mouthfeel. Medium-bodied with a smooth, silky texture. High carbonation provides a refreshing, prickly sensation on the tongue. Alcohol warmth is light and well-integrated at 6.5% ABV.
