This Wild Specialty Beer is a sophisticated marriage of oak-aged Saison and Berliner Weisse, creating a complex canvas for fresh Burlat cherries. The sensory profile is dominated by a vibrant, multi-layered cherry character, offering both the brightness of the fruit and the dry, almond-like depth of the pits. One year in oak foudres imparts a structured woodiness and soft vanillins that temper the sharp lactic acidity. Expect a distinctive funky Brettanomyces presence, weaving earthy and rustic notes through the fruit. The finish is remarkably dry, punctuated by elegant tannins and a lingering, tart red fruit brightness.
Appearance. Vibrant ruby-red with magenta highlights; features a delicate, pink-tinted head with moderate retention. Clarity is characterized by a slight haze consistent with heavy fruit maceration.
Aroma. High intensity of ripe Burlat cherries and red berries. A complex wild fermentation profile offers prominent leathery and earthy Brettanomyces funk, alongside a sharp lactic tang. Subtle toasted oak, vanilla, and faint peppery phenolics emerge as the beer warms.
Taste. Initial impression is a clean, sharp lactic tartness, quickly followed by deep, authentic cherry fruit. The malt presence is low and cracker-like, allowing the woody tannins and rustic funk to lead the mid-palate. Very low bitterness; the acidity provides the primary balance. Finishes bone-dry with a lingering, crisp cherry skin aftertaste.
Mouthfeel. Medium-light body with high, prickly carbonation that provides a refreshing, effervescent scrub on the tongue. A light, pleasant astringency from the oak and cherry skins adds structure. Alcohol warmth is very subtle and well-integrated.
