Les Danaïdes Douce Saison
This Douce Saison offers a bright, rustic profile rooted in a grist of Pilsen and Vienna malts, supplemented by wheat for a soft, grainy texture. The aroma is a fragrant bouquet of floral Strisselspalt and spicy Hallertau Mittelfrüh hops, layered over peppery yeast esters. On the palate, it is remarkably dry and effervescent, showcasing the clean bitterness of Magnum hops against a backdrop of pome fruit and subtle earthy tones. Its lean structure and high attenuation emphasize a refreshing, traditional character, concluding with a crisp, herbal finish that invites another sip.
Appearance. Pale gold color (approximately 5 SRM). Large, dense, rocky white head with excellent persistence and Belgian lacing. Slightly hazy due to the inclusion of wheat malt and being unfiltered.
Aroma. Moderate to high intensity. Pronounced spicy yeast phenols reminiscent of black pepper and fruity esters of pear and apple. Continental hop character is evident, featuring the floral notes of Strisselspalt and the herbal, earthy spice of Hallertau Mittelfrüh. Low grainy, crackery malt background.
Taste. Initial soft, grainy malt sweetness from the Pilsen and Vienna base, quickly overtaken by a firm bitterness provided by Magnum hops. The mid-palate reveals spicy yeast character and floral hop flavors. Finishes very dry and crisp with a lingering peppery and herbal aftertaste. High attenuation ensures no syrupy sweetness remains.
Mouthfeel. Medium-light body with very high, effervescent carbonation providing a prickly sensation on the tongue. Alcohol warmth is very low and well-integrated. Smooth texture from the wheat addition, with no noticeable astringency.
