This barrel-aged Saison offers a sophisticated sensory profile shaped by a year of maturation in Condrieu white wine barrels. The aroma is a complex tapestry of stone fruit, notably apricot and peach, interwoven with the delicate floral notes characteristic of the Viognier grapes previously held in the oak. On the palate, a rustic, grainy malt backbone supports vibrant spicy phenols and fruity esters. The oak integration provides a subtle tannic structure and soft vanilla nuances without overshadowing the style’s signature dryness. Effervescent and bright, it concludes with a lingering, peppery finish, masterfully balancing the elegance of the Rhône Valley with traditional farmhouse character.

Appearance. Pale gold with a slight haze. Topped by a dense, rocky white head that leaves persistent Belgian lace as it slowly recedes. Highly effervescent with visible carbonation rising through the glass.

Aroma. High intensity with a blend of peppery phenols and vibrant fruity esters. Distinct stone fruit aromas of peach and apricot emerge from the Condrieu barrel aging, complemented by floral honeysuckle notes. Low earthy hop character and a faint, rustic grainy malt base provide a solid foundation. No significant alcohol heat.

Taste. Initial impression is bright and very dry. Flavors of pear and lemon zest mingle with spicy black pepper phenols. The white wine barrel maturation adds a delicate layer of stone fruit and a soft vinous acidity. Malt character is lightly grainy and rustic. Bitterness is moderate but assertive due to the high attenuation. Finishes extremely clean and dry with a lingering spicy, slightly tannic aftertaste.

Mouthfeel. Medium-light body with very high, effervescent carbonation that creates a prickly sensation on the tongue. A light, well-integrated alcohol warmth is present. Smooth with a very faint, pleasant oak-derived astringency.
