This bold Rye Double IPA delivers a sensory bridge between old-school resin and modern tropical haze. Brewed with UK rye malt, it offers a distinctive, spicy grain backbone that balances a rich, warming 8.1% ABV. The whirlpool addition of Simcoe and Chinook hops drives deep, classic pine and forest floor aromas that interlace seamlessly with the rye's earthy pepperiness. Double dry-hopping with Motueka and Galaxy, alongside Cryo Simcoe, elevates the profile with an explosive burst of lime, passionfruit, and sweet mango. This interplay of spicy rye structure and luscious, hazy tropical fruit notes yields a complex, robust, and beautifully updated classic.
Appearance. Deep copper to warm amber in color (around 14-17 SRM) with a moderate, persistent off-white head leaving dense, sticky lacing. It displays a noticeable haze, characteristic of a double dry-hopped ale, but remains vibrant.
Aroma. High-intensity aroma featuring a bold interplay of resinous pine, grapefruit, and damp spruce from Simcoe and Chinook, combined with bright tropical layers of lime zest, passionfruit, and peach from Motueka and Galaxy. A rustic, peppery spiciness from the rye malt underpins the hop profile, clean and free of yeast-derived esters.
Taste. An initial burst of tropical fruit and citrus peel is quickly supported by a prominent piney hop bitterness. A substantial, spicy rye malt flavor drives the mid-palate, bringing balance to the high bitterness. It finishes dry to off-dry, with a lingering resinous and peppery aftertaste and a clean, warming alcoholic finish.
Mouthfeel. Medium-full, velvety, and creamy body enhanced by the high rye content. Carbonation is moderate. A smooth, noticeable alcohol warmth is present but well-integrated, with no astringency.

Why Not is a double IPA brewed with 20% UK rye malt. We added piney hops Simcoe and Chinook in the whirlpool which marry with the spiciness of the rye. For a more tropical touch, we dry hopped with Moteuka, Galaxy, and Cryo Simcoe to bring the hops bursting into the foreground. But there is no hiding the rye here as the beer has a copper/amber appearance, and coming in at 8.1% ABV it has a full body and big finish. Why Not will remind you of an old school Rye DIPA with an upgrade to today’s hazy/double dry-hopped expectations.
