Stratusphunk is an elegant hybrid that masterfully bridges the worlds of orchard cider and wild ale. This collaboration features a mixed-fermentation base aged in barrels for several months before being blended with Tempérance cider and macerated with fresh wild elderflowers. The sensory profile is headlined by the delicate, lychee-like perfume of elderflower and the crisp, tart acidity of Auvergne apples. Brettanomyces introduces sophisticated layers of wet hay and rustic funk that complement the subtle oak character. Effervescent and bone-dry, this Brett Beer offers a complex interplay of floral botanicals and orchard fruit with a bright, wild finish.
Appearance. Pale straw to light gold (3–5 SRM). Displays a slight haze from the mixed fermentation and botanical maceration. Pours with a moderate white head that shows moderate to low retention, common in cider hybrids, leaving fine lacing.
Aroma. High intensity with a complex bouquet of fresh elderflower providing floral and tropical fruit notes. Crisp, tart apple and pear aromas from the cider integrate with Brettanomyces character featuring wet hay, earthy funk, and a hint of leather. Subtle vanilla and wood-aged notes are present from the barrel maturation.
Taste. Initial impression is remarkably crisp and tart, dominated by acidic apple and floral elderflower. The profile is bone-dry with virtually no malt sweetness. Hop bitterness is very low, allowing the cider tannins and fermentation-derived funk to provide structure. Notes of hay, citrus zest, and a touch of minerality lead to a clean, lingering floral and slightly tannic finish.
Mouthfeel. Light-bodied with a lean, highly attenuated structure. Carbonation is high, producing a lively and spritzy effervescence on the tongue. Alcohol warmth is very low and well-integrated. A slight tannic astringency from the cider skins and flowers adds a refreshing grip.

Bière fraîche, délicate et fruitée, résultat d’une macération de 250 g/L d’abricots frais dans une Witbier de fermentation mixte élevée plusieurs mois en barrique de vin blanc.
Fermentée via un blend de levures dominé par un souche de Wit belge, mais aussi de la Saison, de la Brett Bruxellensis et une culture de levures et bactéries sauvages issues de fleurs du jardin.
