Praxis is a masterfully crafted Grisette de coupage, blending year-old barrel-aged mixed fermentation ale with fresh beer generously hopped with Saaz. This pale gold, effervescent Saison offers an alluring aromatic profile of zesty lemon, orchard fruit, and a distinct rustic funk. The influence of Saaz provides a delicate floral and spicy counterpoint to the soft, grainy wheat base. On the palate, a bright, citrusy acidity mingles with peppery yeast phenols and earthy oak undertones. Exceptionally dry and light-bodied, it finishes with a clean, lingering bitterness, embodying a sophisticated yet highly drinkable farmhouse character.
Appearance.Pale straw to light gold (3–5 SRM). Pours with a dense, billowy, and long-lasting white head that leaves intricate Belgian lacing. Unfiltered and naturally hazy.
Aroma.Moderate to high intensity. A complex bouquet of spicy pepper and floral Saaz hops overlays fruity esters of pear and lemon peel. The aged component introduces a rustic, slightly leathery funk and a hint of weathered oak. Low grainy malt sweetness is present but secondary to the fermentation-driven character.
Taste.Initial bright tartness leads into a soft, grainy malt profile. Flavors of green apple, citrus, and spicy peppercorn are prominent. The Saaz hops contribute an earthy, herbal finish. Bitterness is moderate but accentuated by the bone-dry finish and high attenuation. The barrel-aged portion adds a subtle, complex acidity that never overwhelms the balance.
Mouthfeel.Light-bodied and highly effervescent with a refreshing, prickly carbonation. No alcohol warmth is detected. Clean and crisp with very low astringency.
